'Ulie scattarisciate

For this recipe you use normal ripe olives. It would be prefer olive cultivar "ogliarola Salento" which is one of the two most common traditional cultivar in Salento.

Simply rinse the olives in clean water and then fry with olive oil and a pinch of salt.
Used to accompany dishes such as white beans and pork roast.
The verb "scattarisciare" means frying.
